Spiced Earl Grey Tea with Fir Tree Honey



2 quarts cold water
6 teaspoons loose leaf tea or 6 Earl Grey tea bags
1/2 cup dried whole cloves

½ cup fir tree honey (optional)
thyme sprigs (optional)


In a large pot combine tea bags or loose leaf in infuser with cloves and bring to a boil.
Remove from heat and let cool.
Mix honey with ½ cup warm water.
Remove tea bags or infuser, add honey mixture and thyme.
Transfer cooled tea into pitcher.
Serve with twist of lemon.
